TOSHA How to Prepare -Make -Cook ?

TOSHA Recipe

Ingredients:

• 500 grams maida or refined flour,
• 2 tsps. Cumin seeds;
• 1 tblsp peppercorns;
• 2 tea-cups sugar,
• 1 tsp rose essence
• 1 tblsp cardamom powder,
• 1 ½ tsp baking powder,
• Dash of salt,
• Dried rose petals.

Method:

1. Coarsely pound together peppercorns and cumin seeds.
2. Shift together flour, salt and baking powder.
3. Mix in all the spices.
4. Mix 5 tblsps. Ghee into the flour with your hands until a little of the mixture squeezed firmly in the hand packs enough to hold together.
5. Add enough water to form a stiff dough.
6. Divide the dough into small balls.
7. Shape each ball into the shape of a thin long kebab and deep fry to a golden colour.
8. Drain.
9. In the meanwhile prepare a thick syrup with sugar and 1 cup water.
10. Mix in the essence.
11. Place toshas on a plate and pour the syrup over them to cover them nicely.
12. Let them soak in the syrup for half an hour and then lift them our with a spoon and place them on a plate.
13. Decorate them with rose petals and when they turn dry thoroughly store them in airtight tins.
