SWEET POTATO PANTUA Recipe
Ingredients:
• 500 grams sweet potatoes, boiled, peeled and mashed;
• 2 tblsps. Refined flour.
Filling---
• ½ coconut, finely grated;
• 1 tblsp. Powdered cardamoms;
• 8 tblsps. Sugar.
Syrup---
• 500 grams sugar,
• 1 tsp. Of rose essence;
• ghee.
Method:
1. Put sugar together with 1 glass of water over a slow fire and prepare
a thick syrup.
2. Mix together sweet potatoes and flour and knead to a smooth mixture.
3. Melt sugar over a slow fire.
4. Add coconut and cook till the sugar begins to crystallize.
5. Stir in the rest of the filling ingredients.
6. Dust your hands with a little flour and divide the sweet potatoes into
small balls of equal size.
7. Shape each ball into an oval cup.
8. Put a teaspoon of filling into each cup and mould into a half-moon
shape.
9. Deep fry the cakes to a golden colour. Drain and toss into the syrup.
10. Sprinkle essence on top.
11. Keep overnight and serve next day.
