SHAKURPARE How to Prepare

SHAKURPARE Recipe

Ingredients:


• 100 grams khoya,
• 500 grams maida or refined flour,
• Milk,
• 450 grams sugar,
• 12 cardamoms;
• 100 grams each of almonds and pistachios;
• 1 tsp of saffron essence;
• 3 tblsps. Melted ghee.

Method:

1. Blanch and grind cardamoms and nuts to a powder.
2. Blend the nuts with flour.
3. Rub in ghee, mix in khoya and then put in enough milk to form a stiff dough.
4. Set aside for 1 hour and then knead once again till very smooth.
5. Form the dough into small balls, and roll out each ball into a small round disc.
6. Now take 1 disc and apply a little ghee on the uppermost side of it, then place another disc over it, once again apply a little ghee on top side and place the third disc over it.
7. Apply a little ghee once again, sprinkle flour over it and roll out into a sheet of a little less than half an inch in thickness.
8. Cut out the sheet into long strips and the strips into long squares.
9. Prepare a thick syrup from sugar and 1 cup water.
10. Stir in essence and remove from fire.
11. Deep fry a few shakurparas at a time to a golden colour, drain thoroughly and put them immediately into the syrup.
12. Roll them all over so that they get smeared with sugar all over.
13. After a little while the sugar will start getting dry, so remove and set them on a place.
14. Dry them completely and store in airtight tins.
