How to Prepare -Make -Cook ?
RUS MALAI Recipe
Ingredients for rus malai:
• Paneer made of 2 ½ litres milk;
• 2 tbsps. Rava;
• ½ tblsps. Each of arrowroot and maida;
• ¼ tsp baking powder,
• 2 kilos sugar,
• 1 ½ litres milk;
• ½ kilo sugar;
• A few drops yellow food colouring;
• 50 grams each ofblancehd and sliced almonds and pistachios;
• A few drops essence of rose;
• 1 tsp. Cardamom powder;
• silver warq.
Method of cooking rus malayi:
1. Mix together, paneer, rava, arrowroot, maida and colour and knead
to a smooth mixture.
2. Form into small, round and flat cakes and follow the procedure of rosgollas.
3. Remove from fire when done, cover and set aside whole night.
4. Next morning place the milk and half kilo sugar on a slow fire and
cook till the milk is reduced to about half its original quality.
5. Remove from fire and chill, drain out the balls from the syrup, cover
with warq and sprinkle remaining ingredients on top.
6. They last for a few days in the fridge.
