POPPY SEED MITHAI Recipe
Ingredients:
• 500 grams poppy seeds;
• 500 grams cashewnuts pounded finely;
• 500 grams coconut grated finely;
• 750 grams sugar;
• 2 litre milk
• 2 tsp. Coarsely pounded cardamoms.
• Silver warq.
• 1 tsp. Essence of rose.
• Ghee.
Method:
1. Clean poppy seeds and soak them in enough milk to cover them.
2. Set aside for the whole night.
3. Next morning, drain the milk out thoroughly and grind the seeds to
a smooth paste.
4. Spread coconut on a cloth and set aside 1 hour.
5. Blend together all the milk and sugar in a steel pan.
6. Cook and stir over a medium fire till a thick syrup forms.
7. In the meanwhile in a separate pan fry the poppy seed paste in 4 tblsps.
Ghee to a light golden colour.
8. Stir the poppy paste along with the rest of the above ingredients into
the syrup.
9. Keep on stirring till the mixture leaves the sides of the pan.
10. Put in a greased tbali, level the surface, cover with warq and cut
into any shape you desire when cold.
11. Store in an airtight tin.
