MOTICHUR LADDU Recipe
Ingredients:
• 250 grams besan or gram flour,
• a pinch of baking powder,
• 250 grams sugar,
• 75 grams each of blanched pistachios, and melon seeds;
• 1 tblsp. Cardamom seeds;
• ½ tsp. Of saffron essence;
• 4 tblsps. Milk;
• ghee.
Method:
1. Blend together sugar and 2 cups water and cook till the syrup turns
thick.
2. Remove from fire and keep it hot.
3. Blend together flour and baking powder, put in milk and essence along
with enough water to make a thick batter.
4. Beat for several minutes.
5. It should be able to drop easily but should not be too thin.
6. Leave it for about 15 minutes.
7. Heat enough ghee for deep frying to smoking, then take a very fine
sieve and rub the batter a little at a time through the sieve.
8. Tap the sieve on the inside edges of the pan to make the mixture fall
through the holes into the hot ghee.
9. Fry the boondi to a pale golden colour.
10. Drain thoroughly and put immediately into the syrup.
11. In this way as soon as one batch is done put it into the syrup.
12. When all the mixtures is used and boondi is in the syrup, put in the
rest of the above ingredients.
13. Mix thoroughly, if the mixture is to dry, sprinkle a little hot milk
over it.
14. Put 2 tblsps. Of hot ghee over the mixture and mix again nicely.
15. Grease your hands and then shape the mixture into small and round
balls by taking some of the mixture into your hands and pressing it hard
into a round shape.
16. Cool thoroughly and store in airtight tins.
