MOTI PAK How to Prepare -Make -Cook ?
MOTI PAK Recipe
Ingredients:
• 250 grams gramflour;
• 250 grams sweet khoya;
• 250 grams sugar,
• A few drops orange red colour.
• Pinch of baking powder;
• 1 tsp. Cardamom powder,
• 25 grams each of blanched and sliced almonds, pistachios and charoli;
• A few drops either essence of rose or saffron;
• Silver foil,
• Milk;
• Ghee;
Method:
1. Put 2 cups water in sugar and prepare a syrup of one thread consistency.
2. Remove from fire and keep it warm.
3. Mix together flour, baking powder, colour and enough milk to make a
thick batter.
4. Beat till smooth and set aside for 15 minutes.
5. Heat enough ghee for deep frying to smoking, lower the heat then.
6. Take a sieve with fine holes and rub the batter a little at a time
through the sieve.
7. Tap the sieve on the inside edges of the pan to make the mixture fall
through the holes into the pan.
8. Fry the bundi till crisp and put into the syrup.
9. When all the mixture is used up and bundi is in the syrup put the syrup
on slow fire and heat to simmering, mix in khoya, nuts and cardamoms and
cook till thick.
10. Remove from fire, mix in the essence and put in a greased thali, level
the surface, cover with foil and set aside to turn cold, then cut into
pieces and store in an airtight tin.
