MODAKAS How to Prepare -Make -Cook ?

MODAKAS Recipe

Ingredients for modakas:

• 400 grams rice flour;
• 1 big pinch salt;
• ½ tsp. Sugar,
• 1 tsp. Oil.

For filling---

• 2 coconuts, finely grated;
• 200 grams each of sugar and finely grated jaggery;
• 133 grams khoya
• 1 tsp. Powdered cardamom seeds;
• 1 tblsp. Poppy seeds.

Method of cooking modakas:

1. Roast poppy seeds.
2. Mix together coconut, sugar and jaggery and cook over a slow fire till the mixture turns thick.
3. Add khoya, cardamoms and poppy seeds and cook till dry.
4. Remove from fire and set aside.
5. Weigh the flour and take three-fourths of its weight of water.
6. Boil the water and put in salt, sugar and oil.
7. Stir in the flour gradually mixing all the time.
8. Cook till the flour turns thick and leaves the sides of the vessel.
9. Remove from fire, cool till bearably hot and knead to a smooth dough with oiled hands.
10. Divide the dough and the filling into equal number of portions.
11. Now take one portion of the dough and place in the centre of your left palm.
12. Press with the right thumb at the centre and sides with the fingers.
13. Form into a cup and stuff with the filling.
14. Gather the cup into seven or eight pleats and then carefully close at the top after pressing them together.
15. Steam for 20 minutes.
16. Serve hot.
