How to Prepare
MITHI BOONDI Recipe
Ingredients:
• 250 grams besan or gram flour,
• 250 grams sugar, a pinch of baking powder.
• 25 grams each of sliced almonds and pistachios;
• ½ tsp of rose essence;
• silver warq.
Method:
1. Blend together sugar and 2 cups water and prepare a thick syrup.
2. Mix together flour and baking powder and add enough water to prepare
a thick batter.
3. Beat for several minutes and set aside for 15 minutes.
4. Heat enough ghee for deep frying to smoking, take a sieve with medium.
Holes and rub the batter a little at a time through the sieve.
5. Tap the sieve on the inside edges of the pan to make the mixture fall
through the holes into the hot ghee.
6. Fry the boondi to a pale golden colour and toss into the prepared syrup,
mix in the nuts, essence and 1 tblsp. Seeds of big black cardamoms.
7. Cover with foil and serve either immediately or when cool.
