MILK VADA How to Prepare -Make -Cook ?

MILK VADA Recipe

Ingredients:

• 1 litre milk;
• 1 cup maida;
• 1 tsp. Cardamom powder,
• 50 grams mixed nuts;
• 25 grams raisins.
• A few drops orange red colour;
• ½ tsp. Either essence of rose of saffron;
• 250 grams sugar,
• Silver foil;
• a big pinch of baking powder,
• Ghee.

Method:


1. Put 2 cups water in sugar and prepare a thick syrup.
2. Remove from fire and keep it warm.
3. Boil the milk over a slow fire till it is reduced to one fourth of its original quantity.
4. Remove from fire and beat till smooth.
5. Slice the nuts and raisins finely.
6. Mix them into the milk along with the rest of the above ingredients with the exception of foil, essence and syrup.
7. Beat till the mixture turns smooth and thick.
8. If the batter is too thick add a little milk to obtain the right consistency.
9. Heat enough ghee for deep frying to smoking, lower the heat and drop the batter with the help of a teaspoon into the ghee.
10. Fry to a golden brown colour over a gently fire, drain and toss into the syrup.
11. Sprinkle essence on top and cover with foil.
12. Serve after half an hour.
