MAVA NI GHARI How to Prepare -Make -Cook ?
MAVA NI GHARI Recipe
Ingredients:
• 250 grams maida;
• Pinch of baking powder;
• 2 tblsps. Ghee.
For filling___
• 250 grams khoya, unsweetened;
• 125 grams powdered sugar;
• 1 small piece dry coconut;
• 25 grams each of almonds cashewnuts, pistachios and charoli;
• 1 tblsp. Gram flour,
• 1 tsp. Cardamom powder;
• A few raisins.
Method:
1. Fry copra, nuts and raisins and slice finely.
2. Heat 2 tblsps. Ghee and gry the gramflour till a savoury smell emanates
from it and it turns red in colour.
3. Mix in khoya and cook till smooth, add the rest of the filling ingredients
with the exception of sugar.
4. Put in sugar after removing from fire and set aside.
5. Mix flour and baking powder.
6. Rub in ghee, then add enough water to form quite a stiff dough.
7. Divide the dough and the filling into equal number of portions.
8. Roll out each portion of dough into a thin round puri.
9. Put the filling on one-half of the puri and spread evenly.
10. Fold over the puri like a crescent or half-moon and seal and pinch
the edges together.
11. Deep fry to a pale golden colour.
12. Drain, cool and store in an airtight tin.
