KHIR PITHE How to Prepare -Make -Cook ?
KHIR PITHE Recipe
Ingredients:
• 2 cups refined flour,
• a big pinch of baking powder and salt;
• 2 litres milk;
• 1 cup sugar;
• 25 grams each of sliced almonds and pistachios;
• rose peals;
• ¼ tsp. Of rose essence.
For filling___
• 1 cup coconut, finely grated;
• 1/4 cup khoya;
• ½ cup sugar,
• 1 tsp. Cardamom seeds;
• 50 grams mixed sliced nuts of your choice.
Method:
1. Put milk and sugar together over a slow fire and cook till the milk
is reduced to half its original quantity.
2. Mix together flour, salt and baking powder along with enough milk to
form a batter.
3. Heat 2 tblsps. Ghee and fry the coconut nicely, add sugar and cook
till it crystallizes.
4. Mix in the rest of the filling ingredients and remove from fire.
5. Now heat 2 tblsps. Ghee in a girdle to smoking, reduce heat and put
a tblsp. Of the batter on the girdle.
6. Spread to a thin round and shallow fry to a golden colour.
7. Remove from fire and put a little of the filling on one end and roll
up into a roll.
8. Cut into two pieces and put in a big plate, in this way prepare all
the rolls.
9. Pour milk on top and sprinkle nuts, cardamoms, petals and essence on
the whole.
10. Serve after a couple of hours.
