DUM-KA-ROTE Recipe
Ingredients:
- 25 grams suji or rava;
- ¼ tsp. Saffron strands
- 100 grams almonds;
- 25 grams each of pistachios, cashewnuts and raisins;
- 1 kilo sugar;
- 500 grams kboya;
- 1 tsp. Cardamom powder;
- 250 grams ghee;
- 1 big pinch nutmeg;
- ¾ cup milk;
- silver warq.
Method:
1. Blanch almonds and pistachios.
2. Set a few nuts aside and grind the rest with cashewnuts to a powder.
3. Slice raisins.
4. Soak saffron in 1 tblsp. Hot milk for 10 minutes, then crush them to
a paste.
5. Mix suji with milk and 1 tblsp. Ghee and set aside for 2 hours.
6. Put 1 cup water in sugar and prepare a thick syrup.
7. Add khoya, powdered nuts and raisins and mix till smooth.
8. Remove from fire and mix in the suji and remaining ghee and stir till
the mixture is free of lumps.
9. Mix in the saffron, crdamoms and nutmeg and put in a flat baking dish
after greasing it nicely.
10. Decorate with remaining nuts and bake in a moderate oven to a nice
golden colour.
11. Cool and then decorate with warq. Cut into pieces and serve soon.
