BOONDI MITHAI Recipe
Ingredients for boondi mithai:
• 500 grams urad dal;
• 500 grams sugar,
• 100 grams each of finely sliced almonds and pistachios;
• 50 grams each of poppy seeds and raisins;
• 50 grams mixed seeds of melon, pumpkin and cucumber;
• ½ litre milk;
• 250 grams ghee;
• 1 tblsp. Cardamom seeds.
Method of cooking boondi mithai:
1. Soak the dal whole night in milk.
2. Next morning, drain out the milk and grind the dal to a smooth paste.
3. Heat enough ghee for deep frying to smoking, lower the heat and drop
small amounts of the dal through a fine colander.
4. Fry to a golden colour.
5. Drain.
6. Put milk and sugar together in a pan and prepare a thick syrup.
7. Add the rest of the above ingredients and keep on stirring till the
mixture turns thick.
8. Remove from fire and put in a grease thali, level the surface and decorate
with warq.
9. Set aside to turn cold and then cut into pieces and store in an airtight
tin.
