How to Prepare -Make -Cook ?

ANARASA Recipe


Ingredients:

• 750 grams rice;
• 500 grams grated jaggery;
• 125 grams poppy seeds;
• 1 tblsp. Cardamom powder;
• 100 grams sugar;
• 50 grams pounded pistachios;
• ghee and milk.


Method:

1. Soak the rice for 3 days, draining out the old and adding fresh water every day.
2. On the third day, dry the rice and then pound it into flour.
3. Mix in the rest of the above ingredients with exception of poppy seeds and pistachios.
4. Mix in also 3 tblsps. Ghee along with enough milk to form a stiff dough.
5. Form the dough into 2 to 3 balls and put in a steel vessel.
6. Cover with a soft cloth and set aside for 3 days.
7. On the fourth day, pound each ball till it becomes soft.
8. If it still remains dry add a small ripe plantain while pounding.
9. On a tbali spread both poppy seeds and pistachios.
10. Take small pieces of the dough and shape each piece into a puri.
11. Press each puri on one side on the poppy seed mixture and deep fry to a golden colour.
